RESPONSIBILITIES: The executive chef will train and manage kitchen personnel and supervise/coordinate all related culinary activities; estimate food consumption and requisition or purchase food; select and develop recipes; standardize production recipes to ensure consistent quality; establish presentation technique and quality standards; plan and price menus; ensure proper equipment operation/maintenance; and ensure proper safety and sanitation in kitchen. The executive chef is also expected to be hands on cooking when needed. The executive chef will also offer culinary instruction and/or demonstrate culinary techniques to the staff.
SPECIAL QUALIFICATIONS: The ability to manage in a diverse environment with focus on exceeding client and customer service expectation is essential to success in this role. Experience in modern and traditional kitchen techniques like sous vide, charcutierie and butchery and smoking preferred.
EXPERIENCE: Previous experience with food and labor cost control, demonstration cooking, menu development, and pricing and development of culinary team. Previous pre- opening experience preferred.
Looking for a chef with either previous experience as a head chef or a sous chef with good experience in high end restaurants and is ready for the next step.
